Fauxtato Salad

The Spring weather was gorgeous here in Northern Illinois yesterday! These are the kinds of days we wait for all winter. The kind of beautiful day that gives you hope that winter is over and summer is almost here!

I spent a few minutes just lying in the hammock in the sun and it was amazing!  With the exception of Madden the Dog attempting to jump up into the hammock every five seconds.

These types of days totally get me in the mood to grill! And grilling on Keto is so easy! Throw some meat and veggies on the grill and you are good to go.  You can come up with all kinds of delicious goodies!  The hard part comes when you want something other than just grilled veggies on the side. Deviled eggs are a great Keto grilling side dish, but sometimes you just want some of your old school favorites!

Enter Fauxtato salad.  Or “fuckstato” salad according to the thirteen year old boy who was reading over my shoulder.  This lead to a fit of giggles (from both of us, no less), and this dish will now forever be known around our household as Cauliflower Fuckstato Salad! I know, I know…more cauliflower. Cauliflower can be totally over done on the Keto diet.  I get it.  But, I promise you, you’ll love it in this cold summery salad! The cauliflower flavor can be a little overpowering to the dressing, so experimenting with adding herbs and spices to your salad to really get the flavor to your liking!

Keto Fauxtato Salad


1 head of cauliflower, chopped into bite sized pieces
3/4 cup mayo (check your brand for HFCS, it is a common ingredient, avoid it!)
3/4 cup sour cream (again, check ingredients, Daisy brand is my fave)
2 Tbsp. dill pickle relish
1 Tbsp. mustard
2 hardboiled eggs, coarsely chopped
Splash of Apple Cider Vinegar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp salt


Start by cutting up a cauliflower head into bite sized pieces.  This recipes works best if you steam your cauliflower in a basket or steamer. You can use the microwave, but you run the risk of the pieces getting mushy.  I like to steam the pieces for about 8 minutes.  Then I toss them in cold water, to stop the cooking process so they don’t get mushy.  Just make sure you drain the water as best you can before adding them to the dressing or you’ll get a soggy salad!

While the cauliflower is steaming, mix the rest of the ingredients together in a large bowl.


Drain cauliflower extremely well, then add to dressing mixture. Chill.  Before serving, sprinkle with paprika for garnish!  You can definitely get more adventurous with your Fauxtato salad.  We don’t like “crunchy” things in ours, but you can add chopped onion or celery or whatever your heart desires in yours for flavor!


We enjoyed ours with some burgers off the grill and have lots leftover for another meal.  And tip, the longer it sits in the fridge, the better the flavor gets! We’ll be making this dish a lot as the weather gets warmer!  Here’s to hoping that Spring weather and grilling season is coming for good!

Makes 8 good size servings. Macros per serving: 213 calories, 3 grams of carbs, 20 grams of fat and 3 grams of protein.
