This Keto friendly Farmhouse breakfast casserole makes a great Sunday brunch addition. It also makes a great prep ahead meal for busy weekday breakfasts. Often, when I make one on the weekend, I will make a second variation just for us to eat throughout the week. It holds up well in the fridge for about a week and reheats very well in the microwave.
There is a set of basic ingredients, but they can be adjusted for many different variations on this breakfast classic. The addition of spinach or peppers changes the taste profile and makes it even more filling. If you’re a meat lover, you can add other breakfast meats or swap out the sausage for something else you love. I also sometimes like to take all of my meat from dinner leftovers, chop them up and toss them in. That leads to something different each time and uses up leftovers creating less food waste, which is always good, since Keto can get expensive!
Ingredients:
18 eggs
1/4 cup Heavy Whipping Cream
1 pkg bulk sausage
3 cups of cheese (or more depending on preference…I like it cheesey!)
Preheat oven to 325 degrees. Crack 18 eggs into a good sized bowl.
While oven is preheating, fully cook sausage.
Add Heavy Whipping Cream to eggs.
Mix well. Grease a 9 x 13 glass pan.
Place sausage in the bottom of pan. Sprinkle half the cheese on top.
Pour egg mixture into pan over sausage.
Top with remaining cheese. Place in preheated oven and bake for 45 minutes or until firm throughout pan.
Slice & enjoy!
If you meal prep these ahead if time, simply store in an airtight container for up to a week. These can also be made in a muffin pan. But you will need to reduce baking time to 20-30 minutes, or until each muffin is firm in the middle. Something about baking in the muffin tins though, it changes the texture and they dry out a bit more. They’re still good, but if you have the time, I really suggest doing them in the 9×13 pan!
You can cut it into whatever serving size fits your needs. We find that cutting into 12 equal pieces works well for us! It gives you pieces that are just right, not too big to make you overly full, but just enough to fill you up and keep you full for a good amount of time!
Macros per piece (based on 12 servings): Calories: 280, Carbs: 1.2g, Fat: 21g, Protein 17g

Any seasoning in this casserole? Salt/pepper ?

I don’t add any seasoning, because we all have different preferences. So we just salt & pepper once it’s on our plate! But you could add whatever you like before you cook it!

Absolutely. I make this on Christmas morning and usually prep it up the night before so its all ready to go!

Is this one pound or two pounds of sausage? Bulk sausage comes in different sizes.
